Stir Fry Pan Mee NoodlesAs is often the case we were looking for a quick dinner the other night.  We often have a variety of fresh (refrigerated) noodles that have come from the market.  Among them are Pan Mee Noodles.  They’re a flat, flour based noodle.  And tasty to boot.Stir Fry Pan Mee Noodles

If you’re looking for healthy, quick, and ridiculously tasty; nothing beats this recipe.  the noodles are maybe $1.50 at the asian market.  They’re refrigerated – not the hard Ramen kind of noodles – and that makes all the difference.  We also had some Lion’s Mane Mushrooms that we picked up at the store.  They look like tribbles.  They’re not cheap, but any mushroom will do, so don’t feel like you need to pop for the expensive ones.  Lion’s Mane mushrooms are great and they look exotic, almost a bit like a sea urchin.  They’re all shaggy.  Something different then.  You can make this a vegetarian dish easily.  We used chicken but tofu is just as tasty, I promise.Stir Fry Pan Mee Noodles

We started with 3/4 cup of chicken – again you can use tofu.  Either way, add a touch of oil to your favorite pan and saute your chosen protein over medium-high heat until mostly cooked through.  After the chicken is cooked you can add your vegetables.  Again we used mushrooms and asparagus.  You could just as easily use or add broccoli, water chestnuts, bamboo, or just about anything else you see fit to stir fry.  We opted for simplicity, a cup and a quarter of asparagus and 3/4 cup of the Lion’s Mane mushroom.Stir Fry Pan Mee Noodles

All at once you add the vegetables, stir fry sauce (1/3 cup), soy sauce (1/4 cup low sodium) and saute over the same medium high heat for five to ten minutes – depending the vegetables you’re using.  Vegetables should be tender but no over cooked.  Turn the burner to high, add 1/3 cup of water and package of noodles.  Cook an additional two to three minutes.  Serve immediately!Stir Fry Pan Mee Noodles

Stir Fry Pan Mee NoodlesStir Fry Pan Mee NoodlesThere’s all manner of adaptability to this recipe, but this is a good start.  Vegetarian, chicken, pork, tofu, it’s endless.  It’s also reliably very good, every time and so quick it’s done before you know it.  Despite it’s serve immediately label – it reheats very well.Stir Fry Pan Mee Noodles

Stir Fry Pan Mee NoodlesFor a recipe that will reliably serve four and up to six you’ll need the following:

  • 2 Pounds of Pan Mee Noodles (Or Equivalent)
  • 1/3 Cup Stir Fry Sauce (Kikkoman Is Great Stuff)
  • 1/4 Cup Low Sodium Soy Sauce
  • 1 Tablespoon Vegetable Oil (Sesame Oil is Particularly Good)
  • 2 Cups Mixed Vegetables (Mushrooms, Asparagus, Broccoli - Be Creative)
  • 3/4 Cup Chicken, Tofu, Pork – Whatever You Like
  • 1/3 Cup Water
  • Love
