Admittedly leftovers can be a scary proposition.  Some things are better the next day.  I think bubble and squeak is even better the next day.  Which makes it leftover leftovers.

Leftovers for Dinner – And No One’s Pouting…

Leftover DinnerAlmost every time I make something, there’s some part left over.  Sometimes a small reusable container full, sometimes a whole plate full.  Nothing wrong with that then.  We both have varying schedules and it’s nice to have something to heat up and eat quickly without too much work.  Tonight I don’t think either of us was particularly in the mood to cook, although I’m almost always happy to string something together.  Tonight I made dinner out of mostly a bit of this and a bit of that.  One of those meals where a little bit of microwave, a little bit of stove top, and a little bit of toaster makes a great meal.

There’s possibly nothing better than breakfast for dinner.  I love eggs, any time of the day or night.  I suppose that’s why diner’s are so successful, I’m not alone in that assessment.  When I’m having a lazy night, eggs are a great way to make dinner quick and tasty.   Continue reading
