I try to cook with weights rather than measures wherever possible. It’s more accurate, it’s hugely helpful with items such as flour (the whole dip and sweep thing works great I know) – but it’s so much easier to get a cheap digital scale and be sure….I mean really sure….exactly what you’re getting.
